A Few Days in Denver

Jon and I lived in Colorado for three years, in fact we met there! While we never lived in Denver, it was one of our favorite cities. We spent a lot of weekends there, so we were very excited to spend a few days in Denver during our Colorado trip.

Denver is a very unique city. It’s got a really fun downtown with a great relaxed vibe. With views of the mountains in the background, a plethora of breweries, and a growing food scene, Denver makes a great destination for a weekend or short getaway.

Denver has a great vibe that you’re sure to love. Check out the below for some of our favorite spots and recommendations!

WHERE TO EAT

For Breakfast: Snooze is a Denver staple and makes the most insane, sugary pancakes. Be prepared to indulge! There’s one location in the iconic Union Station, but the other location is the original (and some say better) location.

For Breakfast: Another location with serious pancakes and french toast is Syrup. But my favorite item on the menu is the crack bacon. Trust me, it’s to die for.

For Lunch: Denver’s alternative to Chipotle (also a big local staple) is Illegal Pete’s. They’ve got a cult following and some majorly delicious burritos.

For Dinner: Our favorite restaurant in Denver is Kitchen Next Door. Unfortunately it wasn’t as good as we remembered, but still totally worth going for the kale chips, tomato soup, and Next Door margarita.

For A Mexican Fix: Rio Grande is a Colorado staple. Get the Manberry margarita, but be warned, it’s so strong there’s a limit on the number you can have!

For A Mexican Fix: Originally a food truck in Austin, TX, Torchy’s Tacos just opened Denver locations. Go for the amazing queso and large range of creative tacos.

For Wine: Believe it or not, Denver has it’s own winery. Be sure to check out Infinite Monkey Theorem and sip on their canned wine produced right in the city.

For Beer: I’m not a big beer drinker, but if you are, Denver is the place for you. Check out one of the many, many local breweries in the city.

WHERE TO STAY

We stayed at the Warwick. The hotel was once the Denver Playboy Club, and is the only hotel with a rooftop pool in Denver. Rooms are quite spacious, it’s dog friendly, and they have two bikes for guests to use to get around the city.

WHAT TO DO

Visit Union Station – Union Station is a staple Denver landmark, and VERY instagrammable. It’s home to the RTD train that runs to-and-from the airport, as well as a bunch of great restaurants, including Kitchen Next Door. It’s also totally worth it to grab a drink at the Terminal Bar located inside.

Bike Around Town – Denver is very bike friendly (although not as friendly as Amsterdam, of course!), so rent one through Bcycle. But it’s a very pretty city and easy to see this way.

Explore RiNo – Denver’s River North district is home to the up-and-coming art and gallery scene. Take a walk around and check out all the new wall murals.

See a Rockies Game – Even if you’re not a big baseball fan, like me, the games are super fun. Coors Field is located in the heart of the city with a beautiful mountain view too. Grab a drink at Blake Street Tavern before the game.

Drink a Champagne Cocktail – My favorite bar in Denver is Roosevelt. It’s a tiny spot that makes amazing cocktails. I like to ask the bartender to whip me up something off-menu.

Take a Trip to the Mountains – It’s not a trip to Colorado without some mountain time. If you can make it happen, get up to Red Rocks for a concert, or drive up to one of the ski resorts for a hike.
